Breakfast sandwiches are the perfect solution to a busy morning and leave you filled and focused all morning. You can prepare these ahead of time, with minimal prep, or whip them up fast in the morning.
If you’re like me, then most mornings consist of running around frantically trying to get everyone out the house on time. The last thing I need at the crack of dawn is for breakfast to be a hassle. I don’t feed my girls cereal for breakfast, and eggs and toast get old… fast. I really wanted something filing that I could make ahead of time, but would also be fast enough to make in the morning.
You can really add anything to a breakfast sandwich; Ham, bacon, veggies. You can use a bagel, English muffin, or even french toast. They are a very versatile meal to suit everyone’s wants.
First, start cooking the meat. I have found that using a lid cooks meat even faster without burning. After a couple minutes, flip the meat. Begin cooking your egg. This is another personal preference. You can use; fried eggs with the yolk broken, eggs with yolk still in them, scrambled eggs, or even a poached egg.
If you are able to find a tiny pan like this one, I highly recommend you purchase it. This pan keeps eggs in a perfect circle to fit on a sandwich, and cleaning it is a breeze.
When your egg is about half way done, toast your bagel, or whatever you are using.
Cheese please? I normally use a Kraft singles piece of american cheese, but have also used pepper jack and provolone cheese. Use 1 or 2 pieces depending on how messy you want your sandwich to be.
Next step is to put it all together. On top of 1 half of a bagel place your meat, then egg and cheese. Top with the other half of the bagel, and that’s it, you’re all set.
If you are prepping these ahead of time, I suggest cooking the meat and storing it until you are ready to use. Then just whip up and egg and toast a bagel.
