There is one thing that I could never give up and that is cheese. I’m a sucker for any kind of dish that involves loads of cheese. I use cheese at least once a day and maybe almost every meal. Normally, Mexican food is the cuisine that doesn’t skimp on the cheese. We have a great little Mexican restaurant that serves the best enchiladas. I enjoy trying something different whenever I go there, but the enchiladas are an easy option when nothing else sounds good.
I discovered this recipe a couple years ago at a cookout, but never asked who made it or how the heck they came up with it. All of the different layers and amount of cheese was pretty appealing. It seriously was so good I couldn’t get it off my mind for the next month. I created my own version of this and I have to say I’m pretty impressed. So impressed that my whole family got burnt out with it rather quickly, I made it like 3 times in 1 week! Honestly, this dish is really that delicious.
This enchilada lasagna is one of my all-time favorite meals to eat, and it’s pretty easy to throw together too! It’s all baked together in a glass dish and topped with layers of cheese and sauce. The creaminess of the inside cools down the kick from the spicy sauce, so even little ones like it
