I am a huge sucker when it comes to
carbs Italian food. When we are deciding where to go to dinner, most of the time, an Italian joint wins. We really enjoy when we can find a little restaurant away from all of the “chain restaurants.” I prefer the more authentic taste you get from a homemade dish.
It reminds me of this time my husband, Blake, decided he wanted to take me on a date night to a really nice Italian restaurant. Neither one of us had been there before but we drove an hour and a half to try it. Well let me just say, it was so fancy, and even more delicious. We even ordered dessert, which we usually pass on. It came time to pay and the card wouldn’t work. So in the middle of this fancy restaurant, we are frantically trying to figure out what the problem could be, while the waitress was just standing there…staring. After a quick call to the bank, we resolved the issue and quickly left. Turns out you should notify your bank if you’re going to be using your card out of town. The whole point of that story; I will pretty much go anywhere, if it means some great Italian food.
This meatball sub is the perfect pairing of easy and delicious. I love these pre-cooked meatballs because all you have to do is heat them up and throw on some sauce. I use my favorite spaghetti sauce, toss in some oregano, basil and pepper, and let it simmer while I’m making the bread.
I like to use a cooling rack to cook the garlic bread on. You don’t have to worry about it getting soggy, and it browns all the way around without having to turn it over. Just use a basting brush for the garlic butter and smear on both sides. Place on the meatballs and cheese and you’ve just made yourself one heck of a sandwich!
