I can’t believe it’s almost fall. I have suffered through the awful humid weather and have finally got some relief with this nice cool autumn weather. I’m not sure yet if summer flew by or if it went by slowly. All I know is I love this time of the year and I’m glad it’s back. School has started, we get to enjoy the fresh air, and to top it all off, it’s FOOTBALL SEASON!!!

We have friends over for pre-games. They come over if it’s our turn to play each other in fantasy football. Then the regular Sunday night games. That is a lot of football, friends, and food.

I believe a football game isn’t complete without great food. When I’m brainstorming what I should prepare, I take into consideration the company we will have over. The guys enjoy the messy foods; wings, ribs, cheese dip (you know, the kind that always ends up everywhere but their mouths) and things of that nature. While those are filling foods, a craving for something usually creeps up later. That is exactly why I enjoy having a variety of little finger foods. By having options, your guests can graze throughout the game, whenever the munchies strike.

These egg rolls are 1 of the many things people just can’t get enough of. They are lightened up by baking instead of frying them and using stir fry sauce opposed to soy sauce, which is super high in sodium. I don’t even bother letting any of the guys know they are healthy because they would avoid them like the plague.

There is no mess of splattered oil, or the added time of waiting for the oil to cool so you can dispose of it. You will be so pleased with these crunchy little things, and over the fact that the oven does all of the work. If you’re in a rut over what to make for your next get-together, don’t think twice about these egg rolls.

A lightened up version of this classic recipe. Delicious, crunchy and packed full with chicken and vegetables. Serve alone or as an appetizer.
Instructions
  1. Pre-heat oven to 410 F
  2. Cook vegetables in a large skillet, covered, with butter for 8-12 minutes.
  3. Pour in the egg and scramble.
  4. Add chicken, rice, broccoli slaw and stir fry sauce. Stir until completely coated in sauce.
  5. Place egg roll wrap on a dry surface and place a large spoonful of the mixture into the center of the wrap.
  6. Form the "roll" using water on the sides to help it stick. *NOTE: The back of the egg roll wrap package should have directions to properly roll the wrap.
  7. Place a cooling or baking rack on a large cookie sheet. Spray with cooking spray.
  8. Line the finished wraps on the rack and spray the tops and sides of each wrap with cooking spray.
  9. Bake in the oven for 10 minutes.
