Mini Street Taco Quesadilla with Chipotle Sauce
Check out this delicious spin on an ordinary taco. Filled with fresh ingredients, cheese and chipotle sauce, these fast and easy minis will be your new go to snack.

In a large bowl combine shredded chicken with chili powder, pepper, garlic and onion powder. Squeeze lemon and lime over chicken and mix well.
On a cutting board, or large plate, spread chipotle sauce over the tortilla shells.
Next add cheese, chicken mixture, onions, jalapenos and pico, dividing evenly between all three shells.
Squeeze a bit more lime juice on each taco
Top with cilantro, chipotle sauce and additional cheese.
Heat a large skillet to medium-high heat and spray with cooking spray.
When the bottom layer of cheese starts melting, carefully fold each shell in half. After about 45 seconds flip each shell to brown the other side.
Place on a cooling rack and serve.
