Have you ever had a night where you just don’t feel like cooking dinner? That happens to me at least once a week, especially when I didn’t plan anything the night before. Sometimes I don’t know what to make. When I finally figure something out, I realize that i don’t have all of the ingredients. Or, there is the fact that I just cleaned my kitchen and don’t want to wash another pile of pots and pans. This meal solved most of those issues. This dish is all cooked in one pan with minimal prep work, and I normally have these ingredients on hand.
I’m obsessed with an amazing sizzlelini from Papa Vino’s. The ingredients just taste like they are soulmates, and are just meant to be together. I was very inspired by the dish and now we eat it on a monthly, sometimes, even weekly, basis. Needless to say, this dish is a staple in our household. The first time I made this dish, my husband ate so much, that he was in a food coma for the rest of the night. He most likely does this on purpose, to get out of dish duty. (I wonder if he knows I’m on to him.)
I can’t get over how amazing and simple this dish really is. You could even make the sausage the night before and just throw it all together in the skillet when you’re ready to start dinner. It is so cheesy and has just a little kick from the tomatoes. My little one doesn’t enjoy that kick, so I leave one sausage whole, and just brown it in the oven for her. This dish pairs perfectly with Cheesy garlic bread and a nice hearty salad. You will feel like you’re in an Italian restaurant, but from the comfort of your own home.
