Is anyone else glad that it is not a million degrees outside? I know I am! I enjoy some hot days but it is so humid here, being outside almost unbearable. To top it off, we haven’t been having the best of luck with our central air. I knew when we bought the house that it was old, but wow, it’s like ancient.

Now that the temperature has gone down, I can comfortably use the oven without the air sputtering to keep the house cool. I love oven meals because the oven does most of the work for you. No standing over the stove making sure nothing is sticking to pots and pans and continuously stirring. It’s a real treat to be able to get a couple of things done while dinner is essentially cooking itself.

These sandwiches are not only a quick and simple, I also use cooked meat, so the entire meal requires little effort from me. Still, my family swoons over these subs! I would like to take credit, but I just can’t on this one.

My go to for the job is Papa Charlie’s Seasoned Italian Beef because it is already cooked and still packed with flavor. I have tried other brands but they were too salty for my taste buds. I got the idea for using garlic butter to toast the bread first from these garlic bread meatball subs. Since the bread is toasted, it prevents the bottom of the buns from getting soggy from the beef juice. I also really enjoy Philly subs, so I tossed on some peppers and onions for some crunch.

Most of the time I don’t even make a side for these subs because everyone always has more than one. After this meal is over you can find us in a food coma on the couch. Luckily, there is hardly a mess to clean up.

Instructions
  1. Pre-heat oven to 400F
  2. Pour the tub of seasoned beef in a large pot and heat on medium-low.
  3. In a large skillet heat olive oil and saute peppers and onions, stirring occasionally. Cover with a lid to keep the moisture in.
  4. In a small sauce pan melt butter and add garlic. Let boil for 1 minute then remove from heat
  5. Using a basting brush, spread melted butter and the garlic pieces over the inside of the bun.
  6. Toast in the oven for 5 minutes, or until golden.
  7. Remove from the oven. Place meat, veggies and cheese on the bun. Put back in the oven for 3 minutes, or until the cheese has melted.
  8. Spoon out the remaining juice from the beef and pour in a bowl. Dip your sandwich and enjoy!
